Cheesy chicken bites

4 eggs – lightly beaten

1½ cups cheddar cheese – finely grated

3 cups breadcrumbs

2 tsp pepper

20 chicken strips – cut into about 1 x 4 inch pieces

flour – for dusting

Salt to taste

Vegetable oil for frying


1Place the flour and egg in separate bowls.

2Place the cheese, breadcrumbs, salt and pepper in another bowl and toss to combine well.

3Working in batches, dip the chicken in the flour, then the egg. Transfer to the breadcrumb mixture and press to coat each piece well. Repeat with the remaining chicken.

4Place enough oil in a non-stick frying pan to cover the base. Heat over medium heat.

5Cook the chicken in batches for two minutes on each side or until golden brown.

6Remove and drain on a paper towel.

7Serve with a sauce (chili or barbecue is recommended).
