Gabulhi Boakiba is a cake made with tender coconut

2 cups grated gabulhi (tender coconut flesh)

1 ½ cups sugar

1 cup plain flour

2 tbsp rose water

3 tbsp water


1Preheat oven to 300 degrees (C)

2In a food processor blend all ingredients into a coarse mixture

3Grease a baking tray and pour the blended mixture into it

4Bake on the middle shelf of the oven for about 45 minutes, until the top turns a golden brown. A dry skewer when inserted will come out clean once it is well baked.

5Once done, take out of the oven and let it cool for a 10 – 15 minutes
