3 cups all-purpose flour

1 cup grated/desiccated coconut

½ tsp salt

2 tbsp cooking oil

½ cup lukewarm water


1Mix all dry ingredients in a large bowl

2Add the oil and mix

3Add the water gradually, while kneading

4Knead well until you have a large ball of dough that doesn’t stick to the bowl or your hands

5Break the dough into tennis-ball size portions

6Flatten the balls, dust the rolling board with some flour and roll out the dough into a circle that is about ½ inch thick

7Cook on a heated flat skillet, over medium heat

8Let one side cook for about half a minute and turn over using a spatula; repeat until both sides are cooked to your liking

Some prefer the roshi soft while others like it crispy. If you like it crispy, keep repeating step 8 over low heat until you achieve the crispness you desire.
